Coley and Jo Thinnes dreamed of a place like the Olde Sonoma Pub years ago, as Coley was honing his skills as a brewer at Lagunitas (where they met-Coley was Jo's guide on a tour of the brewery-awww!) and later as he helped start the craft brewery Iron Springs Brewery in Fairfax. They dreamed of a cozy little place to call their very own, as they settled into life together in Boyes Hot Springs; they dreamed of a place where they could  share their passion for intriguing, fascinating, and mouth-watering brews. Coley is a true lover of beer, and his creativity has lead to development of amazing brews using brown sugar, honey, herbs and wood aging.  His stout recipe won a gold for Iron Springs Brewery in the World Beer Cup, beating out some rather famous stouts in the world! (His wife is very proud of him, if you can’t tell!) Kind and generous, he shares his knowledge of brewing with absolute ease and pleasure, and hopes to infuse the local area with a passion for great brews. (Or reinforce his passion for beer with fellow beer geeks!)

 

Jo Thinnes is a local English Teacher at Casa Grande High School (Go Gauchos!) who is passionate about literature, great writing, and humanitarianism. She grew up in a winemaking and beer-brewing family who had its own outbuildings dedicated to the hobbies, and maintained its own family vineyard at the back of the ranch. Evidently, she had a taste for suds at a very young age. Very young (thanks dad). After moving to Oregon for college and moving around the Northwest and Europe for ten years, her taste for fine brews was engrained for life. A home brewer herself, she made a lasting impression on Coley Thinnes as she toured Lagunitas Brewery one day…and the rest, as they say, is history.
